Pate Choux (Cream Puff Pastry)
Ingredients:
1 Cup - Water
1/3 Cup - Butter
1 Cup - Flour
4 Eggs
Procedure:
1. Set convection oven to 350 degrees.
2. Combine water and butter in a sauce pan on medim-high heat.
3. Bring to a boil, remove from heat and add in flour all at once.
4. Using a wooden spoon, stir flour mixer until it comines and comes clean from pan.
5. Turn mixer into a mixer fitted with a whisk and incorporate eggs, adding in one at a time and completely mixing until incorporated before adding the next.
6. Using a pastry bag pipe, rosettes on to a silpat or parchment paper.
7. Bake in oven for 20 to 30 minutes, until lightly colored and very dry and light to the touch.
*Note: It is very important that puffs develop a nice crisp side wall before removing from oven to prevent collapsing.
