Samosas (Curried Vegetable Pastries)

Ingredients:

Filling:

2 Tablespoons ghee* (or canola oil)

½ teaspoon cumin seeds

½ medium white or yellow onion, finely chopped

1 clove garlic, minced

½ cup peas (fresh or thawed frozen)

1 ½ Tablespoons water

2 teaspoons peeled and finely grated fresh ginger

½ to 1 serrano or Thai bird chile, seeded and finely chopped

½ teaspoon turmeric

2 teaspoons coriander seeds, ground

¼ teaspoon cayenne pepper, or to taste

salt and freshly ground black pepper, to taste

½ pound russet potatoes, peeled and cut into ¼-inch dice

1 Tablespoon freshly squeezed lemon juice (about ½ lemon), or to taste

2 Tablespoons chopped fresh cilantro
