Chicken Tortilla Soup
Ingredients
- 1 tablespoon olive oil
- 1 small yellow onion, diced
- 1/2 red bell pepper, diced
- 2 cloves garlic, diced
- 1 poblano pepper, diced
- 1 jalapeño, finely diced
- 1 (4oz) can diced green chiles, drained
- 1 (14oz) can fire roasted tomatoes
- 1/4 cup frozen corn
- 2 teaspoons cumin
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 3/4 teaspoon sea salt
- 1/2 teaspoon freshly ground pepper
- 2 limes, juiced
- 6 cups low sodium chicken broth
- 1 store bought roasted chicken, chopped
- 1/4 cilantro, chopped
- 2 avocados, chopped
- Mexican cheese, optional for garnish
- Shredded tortillas, optional for garnish
Directions
- Set a large soup pot to medium heat. Once the pan is hot add in olive oil. Sauté onion and red pepper for 3 minutes. Until your onions become translucent. Then add in garlic, poblano pepper and jalapeño pepper. Let sauté for 2 minutes.
- Next add in green chilis, roasted tomatoes, corn, cumin, chili powder, garlic powder, salt and pepper.
- Combine all of the ingredients and once it starts to come to a boil then immediately lower to simmer and add in lime juice, chicken broth, chopped chicken and cover for 30 minutes
- When ready to serve add in cilantro and avocado
- Garnish with Mexican cheese or shredded tortillas (optional)
- Serve with a grilled cheese or plantain chips
