Inspired by a cooking show on television showing how to make a meatloaf with taco toppings, Annette Sinosky decided to surprise her husband and son about three weeks ago.
Going strictly by intuition, the Westmont woman combined ground beef, sweet Italian sausage, crushed tortilla chips, sour cream, salsa, taco seasoning, shredded Mexican cheese, an egg and a dash of salt.
"I thought, 'How bad can it be?'" she said. "But it came out really, really nice. My husband and son just loved it."
Now, Sinosky has a family favorite: Meatloaf Ole'
The meatloaf is baked for about an hour, depending on its thickness. Sinosky said to make sure the aren't overmixed.
"You don't want to work the meatloaf too much. It gets tough," she said.
Sinosky served the meatloaf with rice flavored with marinated cauliflower and peppers, and refried beans.
She said it can be topped with extra tortilla chips and salsa.
She intends to make the dish for an upcoming potluck supper at church.

Ingredients:
1 egg
1/2 cup sour cream
1/3 cup salsa
1 envelope taco seasoning
salt to taste
1 cup crushed tortilla chips
1/2 cup shredded Mexican cheese
1 pound ground beef
1 pound sweet Italian sausage
Directions:
In a large bowl, whisk egg then add all ingredients except the ground beef and sausage.
Mix well, then add the meat.
Mix well, shape into a loaf, and place in 9 by 13 pan.
Bake at 350 degrees for 60 to 65 minutes.
The baking time will depend on the thickness of the meatloaf.
Can be served with extra salsa on the side.
