    I don't much like cooking with ground meat. It's supereasy, of course. Just toss in the skillet and brown, then proceed with spices, sauces, chopped vegetables, etc. But for a weeknight supper, I'd rather saute some chicken or cook pasta.     Saltie is a sandwich shop, about as big as a saltbox, in Williamsburg, Brooklyn. I ate there in April 2011 and still think about the sandwiches my companions and I sampled and shared. We tried the Captain's Daughter, whose combination of top-shelf sardines, house-pickled eggs and an herby salsa verde add up to a wildly delicious sum.
