  1. Pillsbury Bake-Off update: Simple Sweets & Starters category open for entries

    Do you have a $1 million dessert or starter recipe? The 46th Pillsbury Bake-Off Contest is open for entries in the <strong>Simple Sweets and Starters category</strong>. These dishes are the creations that are the hit of any party. Examples: cookies, bars, pies, tarts, bite-size appetizers, tartlets, pinwheels, puffs, bruschetta and focaccia. Entry period is April 4-May 9. Voting is June 13- 27 at <strong>BakeOff.com</strong>. This is the first time in the Bake-Off's history online votes will determine all 100 recipes that will compete for the grand prize Nov. 10-12 in Las Vegas.

  9. Searching for sunshine cake

    Q: A bit of a long shot here. I'm writing from outside London, UK, and am trying to trace a recipe that appeared in the Chicago Tribune back in the '50s/'60s. Told you it was a long shot! I'm looking for a recipe that appeared way back when ... it's "Apricot Sunshine Cake." Apparently it's a sponge cake base with apricot/orange (kind of gel) frosting, and real whipped cream dollops on top. A dear friend's mother cut it out of your paper all those years ago but the recipe has been lost. My friend was hoping to bake this cake for her 55th wedding anniversary which is June 7, so the race is on to find it! I don't have access to the archives and I don't even know if the recipe can be found on there but I thought I'd give it a try anyway.

  11. Recipe: Crisp-Skinned Salmon With Summer Succotash and Creamed Corn

    <strong>Note:</strong> Thomas Keller of the French Laundry in Yountville is one of America's greatest chefs in addition to being a Food section columnist. This recipe is an example of how sometimes it is the simplest things that elevate a dish from good to great. Its secret is not in the mix of ingredients or in any fancy creative strokes; it's in the way Keller dries the skin of the fish so that it fries to a bacon-y crispness. It's a little thing, but it means so much to the dish. To dry the skin of the salmon, drag a knife blade gently but firmly over the skin several times, almost as if you are sharpening a razor on a strop. Use enough pressure to bring any water to the surface of the skin, then reverse direction to squeegee the water off the skin. Dry your blade and repeat until no more water rises to the surface. Place the filets skin-side up in a covered container that allows space between the skin and the lid to facilitate more drying until it's time to prepare them.
