•A toast to real Florida. End or start the year with breakfast at the Old Spanish Sugar Mill in DeLeon Springs State Park in west Volusia County. Guests make pancakes and other breakfast fare on the griddles in the center of each table. From the menu, order pitchers of batter, bowls of pancake toppings as well as bacon, sausage or eggs to cook. Bonus: The park is loaded with trails to walk off those holiday treats.

•Create your own wine tasting. The Wine Room on Park Avenue is a great place to sample top-notch wines but pay for them in small tasting increments. There are 148 wines by the one-ounce pour and 100 wines by the half-glass and full-glass pour. Guests insert prepaid wine cards in the beverage dispensing machines, pressing a button for the volume of wine they want. Selections change monthly.
