Chicken Fajita Bites
Prepared by Joyce Gordon (Recipe from the Fall and Winter Season's best recipe collection, Pampered Chef)
Ingredients:
4 medium bell peppers any color
3 green onions
1/2 Cup fresh cilantro leaves
4 oz mozzarella cheese
2 cups finely diced cooked chicken breast
1/3 cup mayonnaise
2 tbsp chili lime rub (or 1 tbsp chili powder, 1/2 tbsp lime zest, and 1/2 tsp salt)
1/2 cup fat free sour cream
Instructions:
Cut tops off he peppers and scoop out the seeds.
Cut into 6 wedges and arrange on a baking sheet
Finely chop the green onions and cilantro.
Mix half of the onion mixture, half the cheese and chicken, mayonnaise and rub in a small bowl..
Blot any excess water out of the peppers with paper towels, if necessary.
Using a small scoop, scoop a heaping scoop on to the pepper wedges, sprinkle with remaining cheese, and bake 5 o 7 minutes or until cheese is melted.
Mix sour cream and the rest of the onion mixture and spoon onto the fajita bites. Enjoy!!
